Red velvet and cream cheese frosting are one of my favorite flavor combinations!

I love how the sweetness of red velvet is complimented by the tanginess of cream cheese.

 

I was recently asked to make a batch of cookies for one of my neighbors and I knew that I wanted to make them using a cake mix!

That is how these Red Velvet Cake Mix Sandwich cookies were born. The thing I love about cake mix cookies, is that it only requires a few ingredients and they are super easy to put together.

 

I also wanted to take these cookies up a notch by adding white chocolate chips! The white chips in the red dough really pops!

Another great thing about this recipe is that you can eat them on their own if you want.

 

If you are short on time and don’t want to add the cream cheese frosting, these cookies are delicious without it!

  • 4 Ounces Cream Cheese, softened
  • 1/2 Cup Butter, softened
  • 2 Cups Powdered Sugar
  • 1/2 Tablespoon Vanilla Extract

 

How to Make Red Velvet Cake Mix Sandwich Cookies

Red Velvet Cookies

 

  1. Begin by adding the softened butter, eggs, and red velvet cake mix to the bowl of a stand mixer (I like Kitchenaid or Bosch)Two eggs and butter in a mixing bowl to make red velvet cookies.

Cream Cheese Filling

How to Assemble Red Velvet Sandwich Cookies

 

  1. Add the cream cheese frosting to a ziplock bag or piping bag And snip off the end with a pair of scissors.

Easy Red Velvet Sandwich Cookies made from a cake mix with white chocolate chips and filled with creamy cream cheese frosting.

Ingredients

  • 2 Eggs
  • 1/3 Cup Butter, softened
  • 1 Red Velvet Cake Mix, I used Betty Crocker
  • 1 Cup White Chocolate Chips
  • -Cream Cheese Filling
  • 4 Ounces Cream Cheese, softened
  • 1/2 Cup Butter, softened
  • 2 Cups Powdered Sugar
  • 1/2 Tablespoon Vanilla Extract

Instructions

  1. Mix together the butter, eggs, and cake mix in a stand mixer.
  2. Stir in the white chocolate chips.
  3. Use a 2 tablespoon cookie scoop to place the dough balls two inches apart on a parchment lined baking sheet.
  4. Bake the cookies at 350° for 9-11 minutes.
  5. Transfer the cookies to a cooling rack and allow to cool completely.
  6. While the cookies are cooling, begin to prepare the cream cheese frosting by beating the softened butter in a stand mixer until fluffy. Add the cream cheese and beat until incorporated. Mix in the powdered sugar one cup at a time, followed by the vanilla extract. Whip for 2-3 minutes.
  7. Place the frosting in a ziplock bag or disposable piping bag and snip of the end.
  8. Pipe the frosting onto the back side of a cookie and make a sandwich by adding another cookie to the other side.
  9. Roll the cookie sandwiches in festive sprinkles, if desired.
