[Step 1] In a small mixing bowl, whisk together the mayonnaise, lime juice, and taco seasoning. Set aside.
[Step 2] Add the coleslaw mix, diced bell pepper, halved grape tomatoes, black beans, corn, minced jalapeño and cilantro to a large mixing bowl.
[Step 3] Pour the dressing over the coleslaw mixture and stir until fully coated. Chill for at least 30 minutes before serving.

- 1 Bag Coleslaw Mix
- 1 Red Bell Pepper diced
- 1 ½ Cups Grape Tomatoes halved
- 1 Can Black Beans drained and rinsed
- 1 ½ Cups Corn grilled or blackened
- 1 Jalapeño seeded and minced
- ½ Cup Cilantro chopped
- Salt to taste
- Black Pepper to taste
Instructions
- Whisk together the mayonnaise, lime juice, and taco seasoning. Set aside.
- Add the coleslaw mix, diced bell pepper, halved grape tomatoes, black beans, corn, minced jalapeño and cilantro to a large mixing bowl.
