Ingredients

  • 1 Cup Mayonnaise
  • Cup Sour Cream
  • 3 Tablespoons Lime Juice
  • 2 Tablespoons Taco Seasoning
  • 1 Bag Coleslaw Mix
  • 1 Red Bell Pepper diced
  • 1 ½ Cups Grape Tomatoes halved
  • 1 Can Black Beans drained and rinsed
  • 1 ½ Cups Corn grilled or blackened
  • 1 Jalapeño seeded and minced
  • ½ Cup Cilantro chopped
  • Salt to taste
  • Black Pepper to taste

Instructions

  • Whisk together the mayonnaise, lime juice, and taco seasoning. Set aside.
  • Add the coleslaw mix, diced bell pepper, halved grape tomatoes, black beans, corn, minced jalapeño and cilantro to a large mixing bowl.
  • Pour the dressing over the coleslaw mixture and stir until fully coated. Chill for at least 30 minutes before serving.
