Ingredients
*Ingredient amounts are located in the recipe card at the end of this post.
- Chex Cereal (rice or corn): The crispy base that holds all the sweet, lemony coating—perfect for soaking up flavor without getting soggy.
- White Chocolate Chips: Melted down to create the sweet, creamy coating that helps everything stick together.
- Butter: Adds richness and helps smooth out the melted chocolate for even coating.
- Lemon Zest: Provides a pop of fresh, bright lemon flavor that makes the mix taste like real lemon pie.
- Lemon Juice: Just a splash to enhance the tartness and balance the sweetness.
- Powdered Sugar: Coats the cereal in that classic muddy buddy finish—light, sweet, and totally addictive.
- Instant Lemon Pudding Mix: Adds tangy lemon flavor and a pie-like creaminess that takes it to the next level.
How to Make Lemon Pie Muddy Buddies
[Step 1] Add the Chex cereal to a large mixing bowl. Set aside. In a microwave-safe bowl, combine the butter, white chocolate chips, lemon zest, and lemon juice. Microwave at 50% power in 30 second intervals, stirring in between, until the chocolate has completely melted and the mixture is smooth.
[Step 2] Pour the chocolate mixture over the cereal and gently stir until all of the Chex is coated.
[Step 3] Combine the powdered sugar and lemon pudding mix in a large ziplock bag. Add the coated cereal to the bag and shake to coat.
[Step 4] Pour the Muddy Buddies onto a parchment paper-lined baking sheet and allow to cool completely before storing in an airtight container.
Tips & Tricks
- Use fresh lemon zest: It gives the mix a bright, natural lemon flavor that bottled extract just can’t match.
- Melt white chocolate low and slow: Use a double boiler or microwave in short bursts, stirring often to avoid scorching.
- Toss gently: Use a large bowl and a soft hand (or a big zip-top bag) to evenly coat the cereal without crushing it.
- Add powdered sugar in batches: This helps prevent clumps and ensures every piece gets a good coating.
- Let it cool completely: Spread the coated cereal out on parchment or wax paper so it can set without getting soggy.
- Store in an airtight container: Keeps it fresh and crunchy for up to a week—if it lasts that long!
- Make it pretty: Add a sprinkle of crushed lemon cookies or yellow sprinkles for a fun finishing touch.
