Ingredients to make Lemon Pie Muddy Buddies.

Ingredients

*Ingredient amounts are located in the recipe card at the end of this post.

  • Chex Cereal (rice or corn): The crispy base that holds all the sweet, lemony coating—perfect for soaking up flavor without getting soggy.
  • White Chocolate Chips: Melted down to create the sweet, creamy coating that helps everything stick together.
  • Butter: Adds richness and helps smooth out the melted chocolate for even coating.
  • Lemon Zest: Provides a pop of fresh, bright lemon flavor that makes the mix taste like real lemon pie.
  • Lemon Juice: Just a splash to enhance the tartness and balance the sweetness.
  • Powdered Sugar: Coats the cereal in that classic muddy buddy finish—light, sweet, and totally addictive.
  • Instant Lemon Pudding Mix: Adds tangy lemon flavor and a pie-like creaminess that takes it to the next level.

How to Make Lemon Pie Muddy Buddies

[Step 1] Add the Chex cereal to a large mixing bowl. Set aside. In a microwave-safe bowl, combine the butter, white chocolate chips, lemon zest, and lemon juice. Microwave at 50% power in 30 second intervals, stirring in between, until the chocolate has completely melted and the mixture is smooth.

Tips & Tricks

  • Use fresh lemon zest: It gives the mix a bright, natural lemon flavor that bottled extract just can’t match.
  • Melt white chocolate low and slow: Use a double boiler or microwave in short bursts, stirring often to avoid scorching.
  • Toss gently: Use a large bowl and a soft hand (or a big zip-top bag) to evenly coat the cereal without crushing it.
  • Add powdered sugar in batches: This helps prevent clumps and ensures every piece gets a good coating.
  • Let it cool completely: Spread the coated cereal out on parchment or wax paper so it can set without getting soggy.
  • Store in an airtight container: Keeps it fresh and crunchy for up to a week—if it lasts that long!
  • Make it pretty: Add a sprinkle of crushed lemon cookies or yellow sprinkles for a fun finishing touch.
