The great thing about cake mix cookies, is that it only requires a few ingredients and they are super easy to put together. - Eggs: Use large eggs, preferably at room temperature.
- Oil: Use a neutral-tasting oil like vegetable, canola, or avocado.
- Red Velvet Cake Mix: I used a Betty Crocker Red Velvet box of cake mix for this recipe. Duncan Hines is my second choice.
- White Chocolate Chips (optional): These are optional but highly recommended, as they add a great amount of sweetness and texture to the cookie dough.

How to Make Red Velvet Cake Mix Cookies
[Step 1] Add the eggs to a mixing bowl and beat slightly. Add the cake mix and ⅓ cup of oil. Beat until a soft cookie dough forms. (It will be sticky) Mix in 1 cup of chocolate chips by hand.

[Step 2] Use a one or two tablespoon cookie scoop to shape the dough and place the dough balls on a parchment-lined baking sheet about two inches apart. Bake the cookies at 350 degrees for 9-11 minutes.

[Step 3] Remove from the oven and allow the cookies to rest on the baking sheet for a minute or two before transferring to a cooling rack to fully cool.
