These cookies are super easy to make and are a quick and easy way to get your pumpkin fix during the fall season! The addition of a box of spice cake mix adds a unique twist to the traditional pumpkin cookie. Plus, who can resist melty chocolate chips?

In less than 20 minutes, you will have delicious pumpkin chocolate chip cookies to enjoy and share with your friends and family. These cookies are definitely one of my favorite pumpkin desserts! Ingredients for Spice Cake Mix Pumpkin Chocolate Chip Cookies

  • Pumpkin Puree: I used Libby's real pumpkin puree. Make sure it is pumpkin puree and not pumpkin pie filling mix. You will need one can of pumpkin puree.
  • Egg: Adding an egg to the cookie dough helps to bind the ingredients together when baking.
  • Vanilla Extract: I add vanilla extract to almost all baked goods. The addition of vanilla in this recipe helps enhance the flavor.
  • Spice Cake Mix: This can be found in the baking aisle of your local grocery store. You can use Betty Crocker, Duncan Hines, or even a store brand.
  • Pumpkin Pie Spice: I love pumpkin spice, so I added a little bit to enhance these cookies. The spice cake mix already adds similar spice, so feel free to omit the extra pumpkin spice to suit your taste.
  • Chocolate Chips: Use your favorite variety of chocolate chips. Milk chocolate, semi-sweet, and dark chocolate will all work well in this spice cake recipe.

How to Make Cake Mix Pumpkin Cookies

[Step 1] In a large mixing bowl, combine the pumpkin puree, eggs, and vanilla extract.

With other types of cookies, you want to use an airtight container for storage. Pumpkin cookies have a lot of moisture, so storing them in an airtight container will make them sticky.

Store these cookies at room temperature, lightly covered with plastic wrap or aluminum foil. Place a sheet of parchment paper or wax paper between layers.
