Ingredients for Spice Cake Mix Pumpkin Chocolate Chip Cookies
*Ingredient amounts are located in the recipe card at the end of this post.
Pumpkin Puree: I used Libby’s real pumpkin puree. Make sure it is pumpkin puree and not pumpkin pie filling mix. You will need one can of pumpkin puree.
Egg: Adding an egg to the cookie dough helps to bind the ingredients together when baking.
Vanilla Extract: I add vanilla extract to almost all baked goods. The addition of vanilla in this recipe helps enhance the flavor.
Spice Cake Mix: This can be found in the baking aisle of your local grocery store. You can use Betty Crocker, Duncan Hines, or even a store brand.
Pumpkin Pie Spice: I love pumpkin spice, so I added a little bit to enhance these cookies. The spice cake mix already adds similar spice, so feel free to omit the extra pumpkin spice to suit your taste.
Chocolate Chips: Use your favorite variety of chocolate chips. Milk chocolate, semi-sweet, and dark chocolate will all work well in this spice cake recipe.

How Many Cookies Will This Recipe Make?
The amount will depend on what size cookie scoop you use. With a two-tablespoon cookie scoop, this recipe made 38 cookies.
How to Store Pumpkin Chocolate Chip Cookies
With other types of cookies, you want to use an airtight container for storage. Pumpkin cookies have a lot of moisture, so storing them in an airtight container will make them sticky.
Store these cookies at room temperature, lightly covered with plastic wrap or aluminum foil. Place a sheet of parchment paper or wax paper between layers.
How to Make the Cookies More Flat
These pumpkin chocolate chip cookies do not flatten or spread out when baked, so if you desire a flatter cookie, spray the bottom of a glass with nonstick cooking spray and press down the dough before baking.
Frequently Asked Questions
Yes, these pumpkin chocolate chip cookies can be frozen. Place them in a single layer on a baking sheet and freeze until solid. Transfer them to a freezer-safe container or bag and store in the freezer for up to 3 months. Allow the cookies to thaw before serving.
Can I use different boxed cake mix instead of spice cake mix?
You can try using a box of yellow cake mix, but the flavor will be slightly different. You may also want to omit the extra pumpkin spice in the recipe if using yellow cake mix.
Can I use homemade pumpkin puree instead of canned?
Yes, you can definitely use homemade pumpkin puree in this recipe. Make sure it is a thick and smooth puree.
You can try using a gluten-free cake mix and make sure all of the other ingredients are also certified gluten-free. However, I have not tested this recipe with gluten-free substitutes, so results may vary.
