- Vanilla Extract: I add vanilla extract to almost all baked goods. The addition of vanilla in this recipe helps enhance the flavor.
- Spice Cake Mix: This can be found in the baking aisle of your local grocery store. You can use Betty Crocker, Duncan Hines, or even a store brand.
- Pumpkin Pie Spice: I love pumpkin spice, so I added a little bit to enhance these cookies. The spice cake mix already adds similar spice, so feel free to omit the extra pumpkin spice to suit your taste.
- Chocolate Chips: Use your favorite variety of chocolate chips. Milk chocolate, semi-sweet, and dark chocolate will all work well in this spice cake recipe.
How to Make Cake Mix Pumpkin Cookies
[Step 1] In a large mixing bowl, combine the pumpkin puree, eggs, and vanilla extract.
