Pumpkin Puree: I used Libby’s real pumpkin puree. Make sure it is pumpkin puree and not pumpkin pie filling mix. You will need one can of pumpkin puree.
Egg: Adding an egg to the cookie dough helps to bind the ingredients together when baking.
Vanilla Extract: I add vanilla extract to almost all baked goods. The addition of vanilla in this recipe helps enhance the flavor.
Spice Cake Mix: This can be found in the baking aisle of your local grocery store. You can use Betty Crocker, Duncan Hines, or even a store brand.
Pumpkin Pie Spice: I love pumpkin spice, so I added a little bit to enhance these cookies. The spice cake mix already adds similar spice, so feel free to omit the extra pumpkin spice to suit your taste.
Chocolate Chips: Use your favorite variety of chocolate chips. Milk chocolate, semi-sweet, and dark chocolate will all work well in this spice cake recipe.
How to Make Cake Mix Pumpkin Cookies
 In a large mixing bowl, combine the pumpkin puree, eggs, and vanilla extract.
 Add the extra pumpkin spice and the spiced cake mix to the wet ingredients and stir until combined.
 Gently stir in the chocolate chips. The dough will be sticky.
 Bake in a preheated oven set to 350 degrees for 18-20 minutes, then remove and allow the cookies to cool on a wire rack.
