Mexican pizzas are one of my favorite foods and are a fun and easy way to change up your usual pizza or taco night routine. And what could be more fun than making your own homemade version of a Taco Bell classic?

When I was grocery shopping recently, I found some cute little Street Taco tortillas from Mission. I immediately knew that I wanted to use them to make my own Taco Bell Mexican Pizzas.

Taco Bell Mexican Pizza Ingredients

*Ingredient amounts are located in the recipe card at the end of this post.

For the Taco Meat:

Ground Beef: You can use any variety of ground beef in this recipe. I like to use the leanest beef I can find, to avoid having to drain the grease.

Tomato Sauce: This will be used to add flavor and texture to the taco meat.

Taco Seasoning: I use McCormick Taco Seasoning, but feel free to use any brand, or make your own homemade Mexican Seasoning.

For the Sauce:

Tomato Sauce: This will serve as the base for the enchilada sauce that goes on top of a Mexican Pizza.

Spices: chili powder, garlic powder, cumin, salt, and oregano.

For the Mexican Pizza:

Flour Tortillas: Street taco-sized tortillas work best for this recipe. You can find them at almost any grocery store.

Refried Beans: Used as a delicious and easy way to hold the Mexican Pizza together. Use regular, vegetarian, or even refried black beans. You will only use about half of a can of refried beans, so save the rest to serve on the side!

Cheese: I like to use a shredded Mexican cheese blend or cheddar cheese, but you can use any type of shredded cheese that you like.

Toppings: The Taco Bell version of their beloved Mexican Pizza has diced tomatoes, green onions, and sliced black olives.

How to Make Mexican Pizza

[1] Taco Meat: Brown the ground beef in a large skillet over medium heat.. Then add the tomato sauce and spices. Set aside.

[2] Crispy Tortillas: Place the tortillas on a baking sheet and brush with vegetable oil. Bake at 400 degrees for 5 minutes, then flip over and bake an additional 3-5 minutes until the tortillas have begun to brown.

[3] Mexican Pizza Sauce: Pour the tomato sauce into a small bowl, add the spices and mix together.

[4] Mexican Pizzas: Spread 2-3 tablespoons, of warmed refried beans on the bottom tortilla, then add 2-3 tablespoons of the seasoned ground beef mixture. Sprinkle 1-2 tablespoons of shredded cheese on top of the meat.

[5] Place a second tortilla on top of the cheese and spread on 1-2 tablespoons of the Mexican pizza sauce.

[6] Toppings: Add the cheese, diced tomatoes, black olives, and green onions on top of the sauce.

[7] Bake the Mexican pizzas at 400 degrees for 8-10 minutes until the cheese is melted.

[8] Remove from the oven and let them sit for a minute or two before cutting and serving.

More Ways to Make Crispy Flour Tortillas

Stove Top or Griddle: Spray a frying pan with cooking spray and “fry” the tortillas over medium-high heat, flipping them over so that they don’t burn. You’ll want to get them nice and crispy.

Air Fryer: Preheat the air fryer to 400 degrees. Place the tortillas in the air fryer and cook for 2-3 minutes, flipping them over halfway through.

Air Fryer Mexican Pizza Instructions

[1] Taco Meat: Brown the ground beef in a large skillet over medium heat. Then add the tomato sauce and spices. Set aside.

[2] Preheat the air fryer to 400 degrees. Place the tortillas in the air fryer and cook for 2-3 minutes, flipping them over halfway through.

[3] Mexican Pizza Sauce: Pour the tomato sauce into a bowl, add the spices and mix together.

[4] Mexican Pizzas: Spread 2-3 tablespoons of beans (warmed in the microwave) on the bottom tortilla, then add 2-3 tablespoons of the seasoned and cooked ground beef. Top witl 1-2 tablespoons of shredded cheese .

[5] Place another tortilla on top of the cheese and spread 1-2 tablespoons of the Mexican pizza sauce over the entire tortilla.

[6] Toppings: Top pizza with cheese, diced tomatoes, black olives, and green onions.

[7] Place the pizza in an air fryer basket and air fry at 370 degrees for 2-3 minutes

How To Store Leftovers

Leftover Mexican pizzas can be stored in the fridge for up to 3 days. Reheat them in the oven or air fryer until warmed through and the cheese is melted.

You can also freeze them for up to 2 months. I like to individually wrap them in foil, then place them in a freezer-safe bag. When you’re ready to eat them, let them thaw in the fridge overnight, then reheat them in the oven or air fryer.

Frequently Asked Questions

Can I make these ahead of time?

Yes, you can make the taco meat and enchilada sauce ahead of time and store them in the fridge for up to 3 days. You can also assemble the pizzas and store them in the fridge for up to 12 hours before cooking.

Can I freeze a homemade Mexican pizza?

Yes, you can freeze them for up to 2 months. I like to individually wrap them in foil, then place them in a freezer-safe bag. When you’re ready to eat them, let them thaw in the fridge overnight, then reheat them in the oven or air fryer.

Can I use corn tortillas?

Yes, you can use corn tortillas, but I prefer flour because they’re more sturdy and less likely to fall apart.

Do I have to use refried beans?

No, you don’t have to use refried beans, but I think they add a nice creaminess and help to hold the pizza together.

Final Thoughts

The great thing about the mini size of these pizzas is that they are small enough to pick up and eat with your hands!

My kids like me to use a pizza cutter and slice them into fourths. That way they have cute little pizza slices.
