Banana Bread Pudding Ingredients

*Ingredient amounts are located in the recipe card at the end of this post.

Banana Bread: This delicious banan bread pudding recipe uses a 9×5 loaf of banana bread cut into cubes. I use one of these banana bread recipes: Sour Cream Banana Bread or Cake Mix Banana Bread. Feel Free to use any banana bread you have on hand. Stale bread or day-old bread that is a little bit dry works best for this bread pudding.

Banana: Fresh bananas add to the banana flavor and will be cut into slices and spread throughout the dish.

Vanilla Extract: Adds a touch of warmth and depth to the flavor profile.

Eggs: Used for binding and adding moisture to the dish.

Heavy Cream: Creates a rich and creamy texture.

Milk: Helps to thin out the custard mixture. Use any type of milk you have on hand, such as whole, almond, or coconut milk.

Sugar: Adds sweetness to the dish. Use white granulated sugar or brown sugar and adjust according to your preference.

[Step 4] Bake at 350 degrees for 60 – 70 minutes until a knife inserted comes out clean. If the top begins to brown too much before the pudding has set, place a sheet of foil over the top for the remaining cook time. Dust with powdered sugar, if desired.

How to Store Leftovers

Store any leftover banana bread pudding in an airtight container, or covered in plastic wrap, in the refrigerator for up to 3 days. Reheat individual servings in the microwave or enjoy cold. The vanilla sauce can also be stored separately in the fridge and reheated before serving.

Baking Tips and Variations

  • For a twist, add in chocolate chips, butterscotch chips, or chopped nuts before baking.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an extra treat.
  • If you don’t like banana slices, you can add mashed bananas to the egg mixture while in the blender.
  • Make ahead by assembling the dish and refrigerating overnight. Just pop it in the oven in the morning for a hassle-free breakfast or dessert.
  • This recipe can also be made in a slow cooker. Simply place the bread cubes and banana slices in the slow cooker, pour the custard mixture over top, and cook on low for 3-4 hours.
  • If you don’t have leftover banana bread, use any other type of dry bread you have on hand such as brioche, sourdough bread, French bread, or challah bread.
  • Banana bread that has been slightly dried out works best to keep the pudding from becoming soggy. If your banana bread is too moist, place in an oven set at 200 degrees for 20 minutes, then allow to cool.
