  • Box of Brownie Mix: The base of the cookies, providing that rich, chocolatey flavor and fudgy texture. You can use any brand or type of brownie mix (regular or gluten-free) depending on your preference.
  • Vegetable Oil: Adds moisture and helps give the cookies their chewy, soft texture. You can substitute with melted butter for a richer flavor.
  • Eggs: Bind the dough together and help the cookies rise a little. You can swap with flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water) for an egg-free version.

How to Make Brownie Cookies

[Step 1] In a large bowl, mix the brownie mix, oil, eggs, and chocolate chips. Stir until well combined.

[Step 2] Use a cookie scoop to measure and drop the cookie dough onto a parchment paper-lined baking sheet about 2 inches apart.

[Step 3] Bake at 350 degrees for 8-10 minutes, or until the edges are set. Let the cookies rest on the baking sheet for 2-3 mintues before transferring them to a wire rack to cool completely.

Baking Tips & Tricks

  • Don’t Overmix: Mix the ingredients just until combined. Overmixing can lead to denser cookies, and you want them soft and chewy!
  • Chill the Dough: If you have time, refrigerate the dough for about 30 minutes before baking to help prevent spreading and to create thicker cookies.
  • Use a Cookie Scoop: To ensure uniform-sized cookies that bake evenly, use a cookie scoop to portion out the dough.
  • Add Extra Chocolate: For an even richer cookie, throw in a handful of extra chocolate chips or chunks—more chocolate = more yum!
