This recipe totally fits the bill. It is quick, easy and delicious. I’ve made multiple enchilada soup recipes before, but Disneyland’s Cheesy Enchilada Soup is the first one that tasted and smelled just like an actual cheese enchilada my favorite Mexican dish!

Olive Oil: This ingredient adds flavor to the soup and helps cook the chicken, onion, garlic and bell pepper.

Chicken Breasts: I like using boneless, skinless chicken breasts for this recipe. You can also use rotisserie chicken or leftover chicken you have it on hand.

Yellow Onion & Garlic: These aromatic ingredients add flavor to the soup base. Make sure to chop the onion and mince the garlic finely so they cook evenly.

Red Bell Pepper: I recommend using a fresh red bell pepper for this soup, but you can also substitute with roasted red peppers if you prefer. A can of green chiles would also be a great addition to this soup.

Sweet Corn: Canned corn works well for this recipe. You can also use frozen corn, just make sure to thaw it before adding it to the soup.

All-Purpose Flour: This ingredient is used to thicken the soup. You can also use cornstarch or arrowroot powder if you prefer.

Chicken Broth: I recommend using low-sodium chicken broth for this recipe. You can also use homemade broth or vegetable broth as a substitute.

Enchilada Sauce: This sauce adds the signature enchilada flavor to the soup. You can use store-bought sauce found at your local grocery store or make your own homemade enchilada sauce if you prefer. I used Old El Paso mild red enchilada sauce.

Heavy Cream & Sour Cream: These dairy products give the soup a creamy and rich texture. If you’re looking for a lighter version, you can use half-and-half or milk instead.

How to Make this Easy Chicken Enchilada Soup

[Step 1] Heat up the oil in a large soup pot and add the diced chicken and chopped onion. Cook until the the chicken is no longer pink and the onions are translucent.

[Step 2] Add the garlic, peppers and corn and cook for a couple more minutes.

[Step 3] Sprinkle the flour over the top and stir until incorporated then add the chicken broth, enchilada sauce, spices, hot sauce and Worcestershire. Bring to a boil then lower the heat and simmer for 15 minutes.

[Step 4] Stir in the sour cream, heavy cream, shredded cheddar cheese and black beans.  Once the cheese is melted and everything is incorporated, it is ready to serve!

[Step 5] Top the soup with tortilla strips, shredded cheese, sour cream, chopped cilantro and green onions.

Tip: You can make this soup earlier in the day and keep it warm in a crockpot until ready to serve!

How to Store Leftover Enchilada Soup

If you happen to have any leftovers, you can store them in an airtight container in the fridge for up to 3 days. To reheat, simply pour desired amount into a pot and warm it on the stove over medium heat until hot.

You can also freeze this soup for later! Place cooled soup into a freezer-safe container or bag and label with the date. It will keep in the freezer for up to 3 months. To thaw, place in the fridge overnight and reheat on the stove until hot.

Yes, you can easily make this soup vegetarian by using vegetable broth and skipping the chicken. To make it vegan, you can also substitute the dairy ingredients with plant-based alternatives such as coconut cream or cashew sour cream.

Can I make this soup in a slow cooker?

Yes, you can adapt this recipe for a slow cooker by sautéing the chicken and onion first, then adding all ingredients (except for dairy products) into the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours. Stir in the dairy ingredients before serving. Alternatively, you could make this in an instant pot by following the same crock pot instructions, then pressure cook for for 5 minutes and allow the pressure to release naturally for 8-10 minutes.

Is this soup gluten-free?

No, this recipe contains flour as a thickening agent. However, you can use a gluten-free flour blend or corn flour (masa harina) as a substitute or omit it altogether and let the soup thicken naturally.

Can I add other vegetables to this soup?

Ingredients

  • 2 Tablespoon Olive Oil
  • 2-3 Chicken Breasts, cut into bite sized pieces
  • 1 Medium Yellow Onion, chopped
  • 1 Tablespoon Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Can Corn, 15 ounces
  • 1/2 Cup All-Purpose Flour
  • 5 Cups Chicken Broth
  • 2 Cups Enchilada Sauce
  • 1 1/2 Teaspoons Chili Powder
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1 1/2 Teaspoons Sugar
  • 1 Teaspoon Tapatio Hot Sauce
  • 1 Teaspoon Worcestershire Sauce
  • 1/2 Cup Heavy Cream
  • 1/4 Cup Sour Cream
  • 2 Cups Cheddar Cheese
  • 1 Can Black Beans, drained and rinsed

Garnish

  • 1 Package Tortilla Strips
  • 1/4 Cup Cilantro, chopped
  • 1/4 Cup Green Onions, Chopped
  • Cheese, shredded
  • Sour Cream

Instructions

  1. Heat up the oil in a large soup pot and add the diced chicken and chopped onion. Cook until the the chicken is no longer pink and the onions are translucent.
  2. Add the garlic, peppers and corn and cook for a couple more minutes.
  3. Sprinkle the flour over the top and stir until incorporated then add the chicken broth, enchilada sauce, spices, hot sauce and Worcestershire. Bring to a boil then lower the heat and simmer for 15 minutes.
  4. Stir in the sour cream, heavy cream, shredded cheddar cheese and black beans.  Once the cheese is melted and everything is incorporated, it is ready to serve!
  5. Top the soup with tortilla strips, shredded cheese, sour cream, chopped cilantro and green onions.

Notes

*If the soup does not thicken to your liking, prepare a roux. In a separate pan, melt 1/4 cup of butter and whisk in 1/4 cup of flour.  Add 1 cup of soup.  Then 3 more cups.  Stir until thickened.  Add the mixture back into the pot of soup and incorporate. *You can transfer the soup to a slow cooker to keep warm if you will be serving the soup later.
