Red Velvet Cake Mix:  The star ingredient of this recipe that gives these bars their rich red color and unique flavor. Using a cake mix eliminates the need to gather and measure multiple ingredients as well as eliminating the need for red food coloring.

Butter: Used in the red velvet crust layer, one stick of butter adds richness and moisture to the dessert. I used salted butter to enhance the sweetness, but unsalted butter will work as well.

Eggs: Helps bind the ingredients together and adds structure to the bars. One egg will be used in the bottom layer and two eggs will be used in the cream cheese layer. Use room temperature eggs for best results.

Powdered Sugar: This is used to sweeten the gooey cream cheese top layer of the bars. If desired, a little vanilla extract can be added to the cream cheese layer.

Cream Cheese: Gives a tangy and creamy layer on top of the red velvet crust, adding a delightful contrast to the sweetness of the bars.

How to Make Red Velvet Gooey Bars

[Step 1] Red Velvet Layer: Add the box of red velvet cake mix, melted butter, and 1 egg to a mixing bowl and use a silicone spatula or large wooden spoon to combine the ingredients by hand. Use a greased spatula to press the red velvet cake crust into the bottom of a 9×13 baking dish that has been sprayed with nonstick cooking spray. Tip: You can place a sheet of parchment paper in the baking dish before adding the cake mix cookie crust layer for easier removal of the bars when cool.

Step One

[Step 2] Cream Cheese Layer: In a large mixing bowl, beat the softened cream cheese, 2 eggs, and powdered sugar together with an electric hand mixer until smooth, scraping the sides of the bowl as needed. Spread the cream cheese mixture over the red velvet layer.

Step Two

[Step 3] Bake the bars at 350 degrees for 40 – 50 minutes, or until the top begins to turn golden brown.
