Red Velvet Layer: Add the box of red velvet cake mix, melted butter, and 1 egg to a mixing bowl and use a silicone spatula or large wooden spoon to combine the ingredients by hand. Use a greased spatula to press the red velvet cake crust into the bottom of a 9x13 baking dish that has been sprayed with nonstick cooking spray. Tip: You can place a sheet of parchment paper in the baking dish before adding the cake mix cookie crust layer for easier removal of the bars when cool.
Cream Cheese Layer: In a large mixing bowl, beat the softened cream cheese, 2 eggs, and powdered sugar together with an electric hand mixer until smooth, scraping the sides of the bowl as needed. Spread the cream cheese mixture over the red velvet layer.
Bake the bars at 350 degrees for 40 - 50 minutes, or until the top begins to turn golden brown.
Allow to cool completely before cutting into bars and serving.
