Ingredients to make Taco Bell Mexican Pizza Casserole.

Ingredients

*Ingredient amounts are located in the recipe card at the end of this post.

  • Ground Beef: The go-to for a classic taco flavor. I like to use ground sirloin for flavor, but use what ever ground beef you want.
  • Taco Seasoning: Brings a bold, punchy taste everyone loves in Taco Bell. I prefer to use Taco Bell brand seasoning, but any brand or even homemade seasoning will work.
  • Salsa: Use your favorite brand of salsa to help season the ground beef.
  • Refried Beans: Adds a creamy, hearty layer to each bite.
  • Taco Bell Mexican Pizza Sauce or Enchilada Sauce: Pick your favorite brand for a perfect zesty kick.
  • Tostada Shells: Provides a satisfying crunch. By pre-fried tostada shells or fry your own corn tortillas.
  • Diced Tomatoes: Adds a fresh, juicy touch.
  • Shredded Cheese: What’s a Taco Bell-inspired dish without tons of melty cheese?
  • Chopped Green Onions: For a fresh pop of color and flavor.

Tips & Tricks

  • Brown the beef right – Cook your ground beef until it’s nicely browned and crumbled for the best texture.
  • Season generously – Don’t skimp on the taco seasoning; it’s what gives the dish that Taco Bell vibe.
  • Layer it up – Make sure to evenly spread the refried beans and sauce for a perfect blend in every bite.
  • Crunch control – Add tostada shells right before baking to keep them crispy, not soggy.
  • Cheese matters – Use plenty of shredded cheese and melt it to perfection under the broiler for that golden top.
  • Customize toppings – Feel free to mix it up with extra toppings like jalapeños, sour cream, or olives for added flavor.
  • Leftovers tip – Reheat in the oven for best results to keep it from getting too soggy in the microwave.

How to Store Leftovers

Make sure to use an air-tight container to keep all the flavors locked in and your casserole nice and moist. You can easily refrigerate it for up to 3 days, and freeze it as well!

When it’s time to reheat, the oven or air fryer works best for keeping that great texture, but if you’re in a hurry, the microwave is totally fine. Just keep an eye on it to avoid overcooking—times might vary depending on how much you’re reheating.

Recipe Variations

  • Feeling adventurous? Try swapping out the ground beef for a veggie alternative.
  • Want to lighten it up? Use low-fat cheese instead.
  • Need more greens? Load up on extra veggies.
  • Looking for a new texture? Use corn tortillas.
  • Get creative! Play around with different toppings and sauces.
