How to Make a Mexican Breakfast Casserole

[Step 1] In a medium skillet, cook the sausage or chorizo over medium-high heat until cooked through. Mix in ½ cup salsa and taco seasoning. Set aside.

[Step 2] In a mixing bowl, whisk together the eggs, milk, salt, pepper, 1 cup of salsa, and shredded cheese.

[Step 3] Spread the frozen tater tots along the bottom of a 9x13 baking dish that has been sprayed with nonstick spray. Sprinkle the sausage evenly over the tater tots. Pour the egg mixture over the tater tots and sausage in the baking dish.

[Step 4] Bake uncovered at 350 degrees for 50-55 minutes until the eggs have set in the center. Let the casserole rest for 10 minutes before serving.
