- Chopped Onion: Adds a hint of sweetness and depth of flavor when sautéed with the sausage or chorizo.
- Eggs: The main binding ingredient that holds the casserole together and gives it a rich, creamy texture.
- Shredded Cheddar Cheese: Adds gooey, melty goodness and a sharp, cheesy flavor to every bite.
- Milk: Lightens the egg mixture, making the casserole fluffy and moist.

How to Make a Mexican Breakfast Casserole
[Step 1] In a medium skillet, cook the sausage or chorizo over medium-high heat until cooked through. Mix in 1/2 cup salsa and taco seasoning. Set aside.
[Step 2] In a mixing bowl, whisk together the eggs, milk, salt, pepper, 1 cup of salsa, and shredded cheese.
[Step 3] Spread the frozen tater tots along the bottom of a 9×13 baking dish that has been sprayed with nonstick spray. Sprinkle the sausage evenly over the tater tots. Pour the egg mixture over the tater tots and sausage in the baking dish.
[Step 4] Bake uncovered at 350 degrees for 50-55 minutes until the eggs have set in the center. Let the casserole rest for 10 minutes before serving.
[Step 5] Make Ahead Instructions: Follow the directions above, then cover and refrigerate the casserole until ready to bake. Remove from refrigerator and bake at 350 degrees for 55-60 minutes.
How to Store Leftovers
To store leftover Mexican Breakfast Casserole, let it cool completely, then cover it tightly with foil or transfer portions to an airtight container. Refrigerate for up to 3-4 days.
To reheat, place individual portions on a microwave-safe plate and heat for 1-2 minutes, or until warmed through. For larger portions, cover with foil and reheat in the oven at 350°F for 15-20 minutes. If frozen, thaw in the fridge overnight before reheating.
Recipe Variations
- Veggie-Packed: Add diced bell peppers, spinach, mushrooms, or zucchini for extra nutrients and flavor.
- Spicy Kick: Use spicy chorizo, add diced jalapeños, or mix in a dash of hot sauce for more heat.
- Meat Lovers: Add crumbled bacon, diced ham, or a mix of breakfast sausage and chorizo for extra protein.
- Cheese Swap: Substitute cheddar with pepper jack, Monterey Jack, or a Mexican cheese blend for a different flavor profile.
- Tortilla Layer: Replace the hash browns with layers of corn or flour tortillas for a Tex-Mex twist.
- Southwest Style: Add black beans, corn, and diced tomatoes to give the casserole a hearty, southwest-inspired flair.
- Dairy-Free: Use plant-based milk and dairy-free cheese for a lactose-free option.
- Make It Lighter: Swap sausage for turkey sausage or ground turkey, and use egg whites or an egg substitute for a lighter version.
- Topping Ideas: Garnish with avocado slices, sour cream, chopped cilantro, or an extra drizzle of salsa for a fresh finish.
