How to Make the Peanut Butter Fingers

[Step 1] In a mixing bowl, whisk together the oats, flour, baking soda, and salt. Set aside.

[Step 2] In a separate mixing bowl or bowl of a stand mixer, cream together the softened butter, 1 cup of peanut butter, sugar, and brown sugar. Mix in the eggs and vanilla. Add the dry ingredients to the butter mixture and beat to combine.

[Step 4] Spray a jelly roll pan with nonstick cooking spray and press the dough evenly, covering the bottom of the pan. Bake the cookie at 350 degrees for 15 minutes. Tip: Spray the back of a spatula with nonstick spray to help the dough from sticking when spreading on the baking pan.

[Step 5] Remove from the oven and drop the remaining peanut butter by teaspoons over the cookie layer. When the peanut butter begins to melt, carefully spread over the cookie.

[Step 6] When the peanut butter has set up, mix together the frosting ingredients until smooth and use an offset spatula to spread over the peanut butter layer. Cut into bars and serve. Tip: Refrigerate the bars before spreading the frosting and before cutting into bars for best results.

How to Store Leftovers

For best results, place the peanut butter squares in an airtight container; this could be a ziplock plastic bag or a container with a tight-fitting lid. If you're layering them, I recommend placing a sheet of parchment paper between layers to prevent sticking.

These buttery, chocolatey treats can sit at room temperature for up to five days, making them perfect for those moments when you crave just a little sweetness. However, if you prefer them a bit firmer, they can be refrigerated for up to two weeks.

Baking Tips & Tricks

  • Check your oven temperature: Before you start baking your Peanut Butter Fingers, make sure your oven is calibrated correctly. An oven thermometer can be used to ensure your lunch lady-style Peanut Butter Fingers bakes perfectly every time.
  • Proper mixing makes a difference: When combining your butter, peanut butter, sugars, and eggs, take your time to mix these well. Achieving the right consistency in this mixture is crucial for that chewy texture we all love in these bars.
  • Spread the frosting evenly: Once your Peanut Butter Fingers have cooled to room temperature, use an offset spatula to spread the chocolate frosting over the cookie, giving you that smooth, creamy layer of chocolate that covers every inch.
  • Measuring is key: Accurate measurements of ingredients like peanut butter, powdered sugar, and others ensure your Butter Fingers recipe turns out as delightful as expected. Digital kitchen scales can help you measure everything to the dot, ensuring consistency in every batch you bake.
