I am quickly learning that raising three boys takes a lot of work and a lot of food. They are ALWAYS hungry. It doesn’t matter what I pack for them in their lunch boxes, they come home from school, starving! I have been scrambling this Fall, trying to come up with after school snacks that I know they will eat and I can feel good about feeding them. I also want them to have snacks that they can help make or can make themselves, with some assistance, so they can become more involved in the kitchen.
With a little help from my boys, we came up with these Grilled Sweet Berry Waffle Sandwiches. And boy, do they eat them up! Only a few ingredients are needed for this recipe and it comes together in about five minutes. The perfect after school snack to stave of their hunger until dinner!
My littlest guy and I made our way to Walmart for our weekly shopping trip while his brothers were at school and decided to pick up some Kellogg’s Eggo Spider-Man Mixed Berry Marvel waffles to use for our sandwiches. They are located in the Freezer section at Walmart right by the breakfast items and frozen pizzas.
I also discovered some delicious news! Eggo waffles and pancakes now have no artificial flavors and colors from natural sources! The clean ingredients used in these products let me feel good about feeding them to my family. The no artificial flavors and colors from natural sources does not only apply to the waffles that I purchased, but to the whole Kellogg’s Eggo product line!
After purchasing all of our delicious ingredients from Walmart, plus some candy and donuts (you know, the essentials) we made our way home and waited, not so patiently, for the big boys to come home from school. We decided to take a quick walk around the neighborhood to check out the leaves on changing colors on the trees. When we got home, I was definitely ready for a warm, gooey treat and was so excited that the school day was ending in five minutes!
As soon as the brothers came through the door, they were super hungry, so we got to work on our Grilled Sweet Berry Waffle Sandwiches.
[1] Stir softened cream cheese and marshmallow cream together until smooth.
[2] Put two Eggo Spider-Man Mixed Berry Marvel waffles in the toaster on your preferred setting.
[3] Spread the cream cheese and marshmallow cream mixture on each waffle, then sprinkle with your desired toppings. We used chopped strawberries, blueberries and chocolate chips. Place the two waffles together to form a sandwich.
[4] Heat a frying pan on the stove over medium heat and spread butter on the top of the waffle sandwich.
[5] Place the waffle sandwich butter-side down on the frying pan. Spread butter on the other side of the sandwich. Grill for 2-3 minutes and flip over to grill the other side.
Remove the waffle sandwich from the grill and let it cool a minute or two before letting the kids dig in!
As you can see, my kids had a blast helping to prepare their own after-school snack. We enjoyed these waffle sandwiches so much that we may have had them that night for dessert as well! I used extra filling on mine and it was a gooey mess, but man did it taste good!
If you’re looking for a delicious snack or dessert to make for your kids or yourself, get in the car and head to Walmart to pick up some delicious Eggo Spider-Man Mixed Berry Marvel waffles ASAP! Remember that Eggo waffles and pancakes use no artificial flavors and colors from natural sources. I promise you and your taste buds won’t regret it!
