This easy pasta dish has become our go-to for nights when we crave something hearty and delicious but don't have the time for anything elaborate. It's a testament to how a great recipe can make weekday dinners feel like a gourmet feast without any of the fuss.

  • Heavy cream envelops every noodle in a velvety, rich sauce that balances out the heat with its smooth embrace. 
  • Chicken broth or chicken stock lends a comforting, homey base, ensuring that every bite is moist, succulent, and bursting with complexity.
  • Rotel Diced Tomatoes will give spice and substance to the creamy sauce. I like to use fire-roasted Rotel, but feel free to use your favorite variety. For less spice, use Mild Rotel.

How to Make Spicy Sausage Pasta

[Step 1] Melt the butter in a cast iron skillet over medium-high heat and add the sliced sausage, chopped sweet bell peppers, and chopped onions. Cook until the onions are tender. Add the garlic and red pepper flakes and cook for 1 more minute.

[Step 2] Add the chicken broth, heavy cream, Rotel tomatoes, and box of pasta. Bring to a boil. Reduce the heat and cover the skillet. Let the pasta simmer for 15 minutes, stirring often.

[Step 3] When that pasta is tender, stir in the shredded mozzarella and sprinkle the top with chopped cilantro or parsley. If desired, mix in half of the cheese and sprinkle the rest on top. Place under the broiler until the cheese has melted. Enjoy!
