Ingredients
*Ingredient amounts are located in the recipe card at the end of this post.
- Stove Top Stuffing mix: The foundation of this casserole and can easily be customized with your favorite variety. I have used both Chicken flavor and Cornbread with great results.
- Rotisserie chicken: Using a pre-cooked rotisserie chicken cuts down on work and time for this recipe, but feel free to cook and shred your own chicken breasts.
- Chicken broth: Adds flavor and moistens the stuffing mix. I recommend low sodium to control saltiness.
- Butter: Because everything’s better with butter! This will be used when cooking the onion and celery.
- Diced Celery & Diced Onion: These fresh veggies add crunch and taste.
- Cream of Chicken Soup: This will serve as the creamy base that will tie everything together. Mushroom soup is a great alternative for variety.
- Sour cream: For a rich, tangy flavor, or swap with Greek yogurt for a healthier twist.
- Salt and pepper: Season to your liking, and don’t forget you can always add more spices according to your taste preferences.

How to Make Chicken Stuffing Casserole
[Step 1] In a large pan, bring the chicken broth to a boil. Stir in the stuffing mix and remove from heat, cover and let sit. Set aside.

[Step 2] In a skillet, melt the butter and add the chopped onion and chopped celery. Cook until softened about 4-5 minutes.

[Step 3] In a mixing bowl, combine the cream of chicken soup and sour cream.

[Step 4] Spray a 9×13 baking dish with nonstick cooking spray and place the diced or shredded chicken in an even layer. Sprinkle the onions and celery over the chicken. Season with salt and pepper.

[Step 5] Top the onion and celery with the sour cream mixture. Fluff the stuffing with a fork and spread over the top of the casserole.

[Step 6] Bake at 350 degrees for 35-45 minutes until the soup mixture is bubbling.

Tips & Tricks
- Layer it up: Start with a layer of shredded chicken, add some frozen mixed veggies, pour the creamy chicken soup mixture over it, and top it off with a generous amount of stuffing mix.
- Adjust the broth: If you like your stuffing on the moist side, feel free to add an extra 1/4 cup of low-sodium chicken broth.
- Switch up the veggies: Don’t like the veggies in the recipe? Swap them for your favorites like green beans or corn.
- Keep an eye on your oven: Using a convection oven? Lower the temp by 25°F and check the casserole a few minutes early to avoid over-browning.
How to Store Leftovers
Got some leftovers from your cozy chicken & stuffing casserole? No problem! Just pop the leftovers in an airtight container and store them in the fridge for up to three days. If you want to save it for later, freeze it—it’ll last for a couple of months. When you’re ready for round two, reheat it in the oven at 350°F until it’s warmed through. It’ll taste just as good as the first time!

Recipe Variations
- Swap the meat: Use turkey or pork instead of chicken for a delicious twist that pairs perfectly with the stuffing and creamy sauce.
- Add extra veggies: Sneak in bell peppers, spinach, or your favorite veggies for a nutritious boost.
- Switch up the soups: Try mushroom or vegetable broth to change the flavor profile of your casserole.
- Spice it up: Add cayenne pepper or diced jalapeños if you like a little heat.
