In a large pan, bring the chicken broth to a boil. Stir in the stuffing mix and remove from heat, cover and let sit. Set aside.
In the skillet, melt the butter and add the chopped onion and chopped celery. Cook until softened about 4-5 minutes.
In a mixing bowl, combine the cream of chicken soup and sour cream.
Spray a 9x13 baking dish with nonstick cooking spray and place the diced or shredded chicken in an even layer. Sprinkle the onions and celery over the chicken. Season with salt and pepper.
