The other day, my little guy and I were at Target checking out the new Easter Decor in the Dollar Spot. Does anyone else get sucked in by the Dollar Spot at Target like I do? It’s like a black hole that you can’t get out of without spending at least $20. There’s nothing you can do, that’s just how it is.
While at Target, we headed over to the Easter candy section and I spotted my nemesis. Mini Cadbury Eggs. I call them my nemesis, because every year I eat way too many of them. The are so addicting. I can’t help myself. After placing a couple of bags in my shiny red cart, I thought about using the candy eggs to make some kind of Easter treat. That way, I wouldn’t just consume the entire bag on my own. If I made a cute treat out of them, I would be more likely to share them with my family and friends. I’m nice like that, what can I say?
My kids are obsessed with sugar cookies, like that is the only cookie they’ll eat. So I knew that I wanted to make our Easter treat using my favorite sugar cookie recipe. I cut the recipe in half to make these Easter Sugar Cookie Cups because they were going to be small treats and I didn’t want to be overrun by cookies. We decided to make little cookie cups, add green frosting that looks like grass and place a candy egg on top of each one. They turned out so cute!
How to Make Sugar Cookie Cups
To make the cookie cups, cream the butter and sugar together until fluffy. Add the vanilla and eggs and mix until incorporated. Add the dry ingredients and mix. You won’t need to chill the dough for this recipe because you aren’t rolling out the dough. Spray a mini muffin pan with nonstick spray and use a small cookie scoop to scoop about one tablespoon of cookie dough into each cup.
Bake the cookies at 350 degrees for 11-13 minutes. The baking time will vary by oven. Remove the cookies from the oven and immediately press the back of a one teaspoon measuring spoon into the warm cookies to create a cup shape. Allow them to cool for 3-5 minutes and then remove them from the muffin cups, using a butter knife if necessary. Allow the cookies to cool completely while you make the frosting.
How to Make Frosting
This frosting recipe is my go-to recipe and the base for pretty much any frosting I make. I only use butter and it makes such a difference over shortening. To make the frosting, whip the softened butter in a stand mixer, with beaters, or a small food processor like I did for this recipe.
Add the powdered sugar a little at a time. If the frosting is too thick, add a teaspoon or two of milk until the desired consistency is reached. Add the green food coloring and mix well.
Easter Sugar Cookie Cup Assembly
When the cookies are cool and the frosting is made, it’s time to assemble these cute little treats. Add the frosting to a piping bag and use a Wilton 233 tip to pipe the grass inside the cookie cup. If you don’t have that tip, you can totally just cut the end off of a Ziploc bag and make a little swirl.
Once the grass is piped on, place a candy egg on top. There you go! You have cute little Easter Sugar Cookie Cups!
