Ingredients

  • 1 8 ounce Packages Cream Cheese
  • 1 1 ounce Envelope Ranch Dressing Mix
  • 1 Cup Shredded Chicken
  • 1 Cups Sour Cream
  • 1 Cup Bacon cooked and chopped plus more for garnish
  • ½ Cup Sliced Scallions plus more for garnish
  • ½ Teaspoon Black Pepper
  • 2 Cups Cheddar Cheese shredded & divided

Instructions

  • In a 9-inch baking dish, heat the cream cheese for about one minute to soften the cream cheese.
  • Stir in the ranch dip mix and shredded rotisserie chicken, sour cream, cooked bacon, scallions, black pepper, and one cup of shredded cheese.
  • Top the cream cheese mixture with the remaining ¾ cup shredded cheese and bake at 375 degrees for 25-30 minutes until the edges begin to bubble.
  • Turn on the broiler for 3-5 minutes until the top cheese layer begins to turn golden brown.
  • Garnish the top with additional bacon and green onions before serving warm with crackers, pita chips, or tortilla chips.

Notes

[Step 1] Place both cream cheese and the ranch dressing mix in a microwaveable, broiler-safe dish. Heat this mixture on HIGH for approximately one minute, until the cream cheese softens and easily blends with the ranch mix. Stir halfway through to ensure an even consistency.
[Step 2] Fold in the shredded rotisserie chicken, sour cream, chopped bacon, sliced scallions, and black pepper, along with one cup of the shredded Cheddar cheese. Reserve the remaining cheese for later. Continue by microwaving the mixture on HIGH, checking and stirring occasionally to prevent uneven heating, for about 12 to 14 minutes, or until the dip is hot and the cheese has melted completely.
[Step 3] Once the dip is heated through, pull it out and sprinkle the remaining Cheddar cheese on top. Add extra bacon and scallions for a flavorful garnish.
