Ingredients

Pumpkin Sugar Cookie Bars

  • ½ Cup Butter softened
  • ¾ Cup Sugar
  • ¼ Cup Brown Sugar
  • 1 Egg
  • ¼ Cup Pumpkin Puree
  • ½ Teaspoon Vanilla Extract
  • 2 Teaspoons Pumpkin Spice
  • ½ Teaspoon Baking Powder
  • ¼ Teaspoon Salt
  • 2 ½ cups All-Purpose Flour

Cream Cheese Frosting

  • ½ Cup Butter softened
  • 4 Ounces Cream Cheese softened
  • 2 Cups Powdered Sugar
  • ½ Tablespoon Vanilla Extract
  • 1-2 Tablespoons Milk or Heavy Cream

Instructions

Pumpkin Sugar Cookie Bars

  • In a mixing bowl, whisk together the flour, salt, pumpkin spice, and baking powder.
  • Place the softened butter, sugar, and brown sugar in the bowl of a stand mixer. Whip until light and fluffy.
  • Mix in the eggs, vanilla, and pumpkin puree.
  • Add the dry ingredients to the butter and sugar mixture and stir to combine.
  • Place a sheet of parchment paper on a 9x13 jelly roll pan with the edges hanging over the sides.
  • Spread the cookie dough over the parchment paper and bake at 350 degrees for 25-30 minutes. Remove the cookies and allow them to cool completely before frosting.

Cream Cheese Frosting

  • Whip the butter and softened cream cheese in a stand mixer until fluffy.
  • Add the powdered sugar and vanilla and whip together for 2-3 minutes.
  • Spread the frosting over the top of the pumpkin sugar cookie bars and refrigerate until the frosting sets. Cut and serve!
