Pumpkin Bars
Whisk together the eggs, sugar, melted butter, pumpkin puree, and vanilla extract in a large mixing bowl. Set aside.
In a separate bowl, whisk the flour, baking powder, baking soda, pumpkin spice, and cinnamon together.
Add the wet ingredients to the dry ingredients and stir until combined.
Lightly grease a 10x15 inch jelly roll pan and fill it with the pumpkin mixture.
Bake at 350 degrees for 30-35 minutes or until a toothpick inserted comes out clean. (Note: the batter will rise to the top of the pan, so consider placing the jelly roll pan on a larger baking pan to catch any excess batter)
Remove and cool completely on a wire rack.
Cream Cheese Frosting
Beat the cream cheese and butter in a stand mixer or with a hand mixer for 1-2 minutes.
Add the powdered sugar and vanilla and beat for another 1-2 minutes, until smooth.
Spread the frosting over the cooled bars, then refrigerate for 15-20 minutes before cutting into squares.
