Ingredients

Pumpkin Bar Ingredients:

  • 3 Eggs
  • 2 Cups Sugar
  • ¾ Cups Butter melted
  • 1 Can Pumpkin Puree
  • 1 Teaspoon Vanilla Extract
  • 1 Cup All-Purpose Flour
  • 1 ½ Teaspoons Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Tablespoon Pumpkin Pie Spice
  • ½ Teaspoon Cinnamon

Cream Cheese Frosting Ingredients

  • 4 Ounces Cream Cheese softened
  • ½ Cup Butter softened
  • 1 ½ Teaspoons Vanilla Extract
  • 2 Cups Powdered Sugar
  • 1-2 Tablespoons Milk if needed

Instructions

  • Pumpkin Bars
  • Whisk together the eggs, sugar, melted butter, pumpkin puree, and vanilla extract in a large mixing bowl. Set aside.
  • In a separate bowl, whisk the flour, baking powder, baking soda, pumpkin spice, and cinnamon together.
  • Add the wet ingredients to the dry ingredients and stir until combined.
  • Lightly grease a 10x15 inch jelly roll pan and fill it with the pumpkin mixture.
  • Bake at 350 degrees for 30-35 minutes or until a toothpick inserted comes out clean. (Note: the batter will rise to the top of the pan, so consider placing the jelly roll pan on a larger baking pan to catch any excess batter)
  • Remove and cool completely on a wire rack.
  • Cream Cheese Frosting
  • Beat the cream cheese and butter in a stand mixer or with a hand mixer for 1-2 minutes.
  • Add the powdered sugar and vanilla and beat for another 1-2 minutes, until smooth.
  • Spread the frosting over the cooled bars, then refrigerate for 15-20 minutes before cutting into squares.
