Ingredients

  • 16 Ounces Penne Pasta
  • 1.5 - 2 Pounds Chicken Breast sliced
  • 2 Tablespoons Olive Oil or Oil from Sun Dried Tomatoes divided
  • 1 Onion chopped
  • 2 Tablespoons Garlic minced
  • ½ Teaspoon Red Pepper Flakes
  • 1 22 Ounce Jar Alfredo Sauce
  • ½ Cup Sun Dried Tomatoes
  • 1 Cup Parmesan shredded
  • 1 Tablespoons Basil chopped

Instructions

  • Heat a large pot of salted water and cook the pasta in boiling water al dente according to package directions.
  • While the pasta is cooking, season chicken with salt and black pepper. Heat 1 tablespoon of olive oil (I used the oil from the jar of sundried tomatoes) in a large skillet and cook chicken over medium-high heat until cooked through.
  • Remove the chicken from the skillet and cook the chopped onion in the remaining 1 tablespoon of oil for 2 minutes. Add the garlic & red pepper flakes and cook for 2 more minutes.
  • Add the sauce, tomatoes, and Parmesan cheese to the onion mixture and cook over medium heat for a couple of minutes until the cheese melts. Add the cooked chicken and drained cooked pasta to the skillet and stir to coat. Sprinkle the top with more parmesan and chopped basil if desired.
