Gingerbread Rice Krispie Treats are a festive twist on classic Rice Krispie Treats, combining the warmth of gingerbread with the irresistible crunch of Rice Krispies. Yum! These goodies can be ready in under 30 minutes! Cut into traditional squares or use a cookie cutter to make them into cute Mickey Mouse shapes. Just like at Disneyland!
Melt butter over medium heat in a large saucepan. Then add the molasses and marshmallows (reserve 1 cup of marshmallows for later). Stir the mixture with a silicone spatula until the marshmallows are all melted and them are no lumps, then completely stir in the spices.
Add the Rice Krispies cereal to the marshmallow mixture (if your pan is large enough) or add both the cereal and marshmallow mixture to a mixing bowl that has been sprayed with nonstick cooking spray.
Fold the cereal into the marshmallow mixture until combined and completely coated. Gently fold in the reserved 1 cup of marshmallows, being sure to not overmix to keep the reserved marshmallows from melting.
Spray a 9×13 dish (if making traditional squares) or 8x8 square baking pan for thicker treats, with cooking spray and spread the Gingerbread Rice Krispie Treats mixture into the dish in an even layer with a rubber spatula and allow the treats to cool completely then cut and enjoy!
