Ingredients

  • 16 Ounces Bacon chopped
  • 1 Yellow Onion chopped
  • 1 Carrot peeled and chopped
  • ¾ Cup Diced Celery
  • 4 Large Russet or Yukon Gold Potatoes peeled and diced
  • 4 Medium Red Potatoes diced
  • ¼ Cup Flour
  • 3 Cups Chicken Stock
  • 2 Teaspoons Salt
  • ½ Teaspoon Black Pepper
  • ¼ Teaspoon White Pepper
  • 4 Cups Heavy Cream
  • Toppings: Chopped Chives Bacon Bits, Sour Cream, Shredded Cheese

Instructions

  • Chop the bacon and add it to a large soup pot. Fry the bacon at medium-high heat until no longer pink. Remove the bacon from the pan and drain on a paper towel. 
  • Cook the chopped onions, carrots, and celery in bacon the bacon grease until the onions are translucent. Add the potatoes and cook for 4 more minutes.
  • Sprinkle flour over the veggies and stir for 5-7 minutes. Slowly add the chicken broths and half of the bacon to the pan. Add salt, white pepper, and black pepper to season.
  • Simmer the soup over medium heat for 25 minutes. Use a Potato masher to smash some of the potatoes. Add the heavy cream and simmer for an additional 5 minutes
  • Divide the soup into individual bowls and top with chopped chives, extra bacon pieces, sour cream, and shredded cheese.
