Preheat your oven to 200° F or set it to the warming function and turn on your Mickey Mouse waffle iron.
In a large bowl, sift or whisk together the flour, corn starch, salt, baking powder, baking soda, and malted milk. Set aside.
In a separate bowl, beat the buttermilk, oil, egg yolks, and vanilla together. Set aside.
Use a stand mixer with a whisk attachment or a hand mixer to beat the egg whites to soft peaks.
Sprinkle the sugar over the egg whites then beat again until firm peaks have formed.
Pour the wet ingredients into the dry ingredients and stir until just moistened.
With a spatula, gently fold the egg whites into the batter being careful not to over mix.
Spray your waffle iron with nonstick spray and add the batter. I Used about 3 Tablespoons of for these Mickey Waffles. Use the appropriate amount for your waffle maker.
Bake your waffles until brown and crispy.
Remove them from the waffle iron and place them on a baking sheet in the warmed oven until ready to serve.
