Ingredients

  • 1 Box Jiffy Muffin Mix
  • 1 Yellow Cake Mix
  • 4 Eggs
  • 1 ⅓ Cups Milk
  • ½ Cup Butter melted

Instructions

  • Beat the eggs in a large bowl with an electric mixer or in a stand mixer. Then add the rest of the ingredients and beat for about one minute, until light and fluffy.
  • Pour the cornbread batter into a prepared pan (9x13 pan or cast iron skillet) that has been sprayed with nonstick cooking spray. Bake at 350 degrees for 30 - 35 minutes, until a toothpick inserted comes out clean (toothpick test).
  • Allow the corn cake cool, then cut into 12 slices and serve with butter and a drizzle of honey or try this whipped honey butter recipe.
