Ingredients

  • 1 Cake Mix Vanilla, White, or Yellow
  • Cup Oil Vegetable, Canola, or Corn
  • 3 Eggs
  • 1 ½ Cups Mashed Bananas About 4 medium
  • Flour for dusting pans

Instructions

  • Spray loaf pans with cooking spray and dust with flour.
  • Mash your bananas with a fork or with a small food processor.
  • Add the eggs, oil, and mashed bananas to a mixing bowl and whisk together.
  • Sprinkle the cake mix over the wet ingredients and gently stir to combine, but don't over mix.
  • Divide the batter between the two loaf pans and bake at 350 degrees for 45-55 minutes, or until a knife inserted into the center comes out clean.
  • Remove the banana bread from the oven and allow to cool in the pans for 15 minutes.
  • Transfer the loaves to a cooling rack and allow to completely cool for 1-2 hours before slicing.
