Almond Joy Cookies

Delicious and easy Almond Joy Cookies are like a chocolate chip cookie loaded with chocolate chips, coconut and almonds. Dip them in melted chocolate and you definitely have a winner!

Ingredients

  • 1 Cup Butter softened
  • ¾ Cup Sugar
  • ¾ Cup Brown Sugar
  • 2 Eggs
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Coconut Extract
  • ½ Teaspoon Almond Extract
  • 2 Cups All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • ¾ Teaspoon Salt
  • 2 Cups Coconut Flakes
  • 2 Cups Chocolate Chips
  • 1 ½ Cups Almonds chopped

Instructions

  • Beat the butter and sugar together with a hand mixer or stand mixer until light and fluffy.
  • Beat in the eggs, vanilla, almond extract, and coconut extract.
  • Add the flour, salt, and baking powder. Mix until combined.
  • Stir in the coconut, chocolate chips and almonds.
  • Use a cookie scoop to drop the cookie dough onto a parchment lined baking sheet.
  • Bake at 375 degrees for 9-11 minutes or until lightly browned.
  • Cool for 1 minute on the baking sheet before moving to a cooling rack.

*Optional Chocolate Dip I dipped half of my cookies in melted chocolate and it was amazing. To dip the cookies you will in chocolate, you will need:
  • 2 cups Chocolate Chips
  • 1 teaspoon Vegetable of Canola Oil
  1. Place the chocolate chips in a microwave-safe bowl and pour the oil over the top.
  2. Microwave the chocolate on 50% power in 30 second increments stirring between each until melted.
  3. Dip each cooled cookie in chocolate and place on a baking sheet.
  4. Place in the refrigerator or freezer until set.
