Ingredients

  • ¼ Cup Butter softened
  • ¼ Cup Flour
  • 36 Ounces Tortellini frozen or fresh
  • 2 Cups Heavy Cream
  • ½ Cup Milk
  • 1 Teaspoon Dijon Mustard
  • ½ Teaspoon Garlic Powder
  • ½ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • 2 Cups Sharp Cheddar Cheese shredded
  • 1 Cup Mild Cheddar Cheese shredded
  • 2 Ounces Cream Cheese

Instructions

  • Cook the Tortellini according to the package directions. Drain and rinse in cold water to stop the cooking process. Set aside.
  • In a large skillet, melt the butter over medium heat. Whisk in the flour and cook for 1 minute.
  • Slowly whisk in the heavy cream and milk and bring the mixture to a simmer until it starts to thicken.
  • Reduce the heat and mix in the mustard, garlic powder, paprika, and salt. Then add the shredded cheese, a little at a time, stirring until the cheese melts.
  • Add the tortellini to the cheese sauce and stir to coat. Serve immediately.
