Ingredients

  • ½ Cup Butter
  • 1 Tablespoon Minced Garlic
  • 2 Tablespoons All-Purpose Flour
  • 2 Cups Heavy Cream
  • 1 Cup Milk
  • 1 ½ Cup Parmesan Cheese shredded
  • ½ Teaspoon Ground White Pepper
  • Salt and Black Pepper to taste
  • Pinch of Nutmeg if desired
  • 16 Ounces Fettuccine Pasta

Instructions

  • Cook pasta in a large pot according to the package directions.
  • While the pasta cooks, melt butter in a large skillet over medium high heat and add the garlic. Sprinkle with flour and whisk for one minute to create a roux.
  • Slowly whisk in the heavy cream, followed by the milk.
  • Bring to a rolling boil, then reduce the heat and simmer the sauce for about 10 minutes, until the sauce begins to thicken.
  • Sprinkle the grated parmesan cheese into the sauce along with the white pepper, black pepper, salt, and nutmeg (if desired).
  • Add the cooked and drained pasta to the sauce and stir to coat the noodles.

Notes

  • For a cheesy flavor, use a combination of Parmesan and Romano cheese.
  • If the sauce is too thick, add more milk or pasta water to thin it out.
  • For an added punch of flavor, sprinkle with red pepper flakes before serving.
  • If you want to make it extra creamy, stir in a little bit of cream cheese when adding the Parmesan cheese.
  • To make it vegetarian, swap out the butter for olive oil and use vegetable stock instead of heavy cream.
