Ingredients

  • 2 cans 14.5 oz each Diced Tomatoes any variety
  • 2 cans 14 oz each Tomato Sauce
  • 1 Cup Water
  • ¾ cup Greek Yogurt or Sour Cream
  • ½ cup Parmesan Cheese grated
  • 2 Tablespoons Italian Seasoning
  • 1 ½ Tablespoons Sugar
  • 2 Teaspoons Chicken Bouillon granulated
  • 1 ½ Teaspoons Salt
  • 1 teaspoon Garlic Powder
  • ½ Teaspoon Onion Powder
  • ¼ - ½ Teaspoon Black Pepper
  • ¼ - ½ Teaspoon Red Pepper Flakes

Instructions

  • Add all of the ingredients to a countertop blender or food processor (or use and immersion blender) and pulse until the soup reaches your desired consistency. If the soup is too thick, add a little water, vegetable broth, or chicken broth to thin it out.
  • Pour the tomato soup mixture to a soup pot and heat over medium heat until warmed, stirring occasionally.
  • Divide the hot soup into individual bowls and serve with a piece of bread or grilled cheese sandwiches!
