Ingredients

Sugar Cookie Cups

  • ¾ Cup Butter softened
  • 1 Cup Sugar
  • ½ Teaspoon Vanilla Extract
  • 2 Eggs
  • 2 ½ Cups All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • ½ Teaspoon Salt

Vanilla Frosting

  • ½ Cup Butter softened
  • 1 Teaspoon Vanilla
  • 2 Cups Powdered Sugar
  • 2-3 Teaspoons Milk

Topping

  • 36 Chocolate Eggs like Mini Cadbury Eggs

Instructions

  • Cream the butter and sugar until light and fluffy.
  • Mix in the vanilla and eggs until incorporated.
  • Add flour, baking powder, and salt. Mix well.
  • Spray a mini muffin tin with non-stick spray.
  • Using a cookie scoop, add one tablespoon of cookie dough to each muffin cup.
  • Bake at 350 degrees for 11-13 minutes.
  • Press the back of a 1 teaspoon measuring spoon into each cookie to create a cookie cup.
  • Allow to cool for 2-3 minutes, then transfer to a cooling rack.

Green Vanilla Frosting

  • Mix in the vanilla.
  • Add the powdered sugar a little at a time, mixing between each addition.
  • Add milk, one tablespoon at a time until the desired consistency is reached.
  • Add enough green food coloring to make light green.

Easter Sugar Cookie Cup Assembly

  • Place the frosting into a piping bag.
  • Using Wilton Tip #233, pipe grass into the center of each cookie cup.
  • Place a chocolate egg on top.
