Cream the butter and sugar until light and fluffy.
Mix in the vanilla and eggs until incorporated.
Add flour, baking powder, and salt. Mix well.
Spray a mini muffin tin with non-stick spray.
Using a cookie scoop, add one tablespoon of cookie dough to each muffin cup.
Bake at 350 degrees for 11-13 minutes.
Press the back of a 1 teaspoon measuring spoon into each cookie to create a cookie cup.
Allow to cool for 2-3 minutes, then transfer to a cooling rack.
