Combine the wet ingredients, then add the dry ingredients. Because of the extra moisture from the pumpkin, this dough will need to be refrigerated for 2 hours.
Roll out the cookie dough on a floured surface, then use your favorite cookie cutters to cut out the cookies. I have made pumpkin shapes and Mickey too!
Mix all of the icing ingredients together until you get a corn syrup-like consistency. This icing will dry hard so make sure it is stored in an airtight container.
