Step one:

Combine the yeast mixture, evaporated milk, oil, sugar, egg, vanilla, baking powder, salt, and 2 cups flour in a stand mixer with a paddle attachment at medium speed until smooth.

Step two:

Replace the paddle attachment with a dough hook attachment of an electric mixer and add enough remaining flour to make a soft dough that is still a little sticky.

Step Three:

Place the beignet dough in an greased bowl, covered with plastic wrap, and refrigerate for at least two hours to overnight.

Step four:

Punch down the dough and turn it out on a floured surface. Roll into a rectangle. Use a Mickey cookie cutter to make Mickey shaped beignets.

Step Five:

Fry 2-3 beignets at a time in oil that is 375 degrees until golden brown. Use tongs to remove the Mickey Beignets from the hot oil and place them on a paper towel for 1-2 Minutes.

Step six: 

Add 1/2 cup powdered sugar to a paper bag and add one beignet at a time. Close the bag and shake until the beignet is covered with powdered sugar. Tap below for the full recipe!
