Crust Ingredients

To make the graham cracker crust you will need graham crackers, sugar, cinnamon, and melted butter.

Prepare the Crust

Crush the graham crackers into crumbs and mix with the other ingredients. Press into the bottom of a springform pan and bake for 10 minutes.

Cheesecake Ingredietns

For the batter you will need heavy cream, pumpkin, cream cheese, sugar, sour cream, eggs, pumpkin spice, and vanilla extract.

Cheesecake Batter

Beat all of the cheesecake ingredients together in a stand mixer or in a mixing bowl with an electric mixer until the mixture is smooth.

Bake the Cheesecake

Wrap the springform pan with three layers of foil and bake the cheesecake in a water bath for 90 minutes.

Cool the Cake

Allow the cheesecake to cool in the oven with the door propped open for one hour, then on the counter until room temperature. Refrigerate overnight.

Whipped Cream

To make the white chocolate whipped cream you will need cold heavy cream, sugar or powdered sugar, and white chocolate instant pudding.

Pipe the whipped cream on to the cooled pumpkin cheesecake and cut into slices. Enjoy for Thanksgiving or Christmas dinner or whenever you want!
