Gather the Ingredients

You will need OREO cookies, melted butter, white chocolate, cream cheese, sugar, eggs, vanilla extract, and salt.

Prepare the Crust

Crush the OREO cookies and mix with melted butter. Press into the bottom of a springform pan and bake at 350 degrees for 10 minutes.

Melt the Chocolate

Microwave at 50% power for one minute. Stir. Continue to microwave at 50% power in 30 second intervals, stirring in between until smooth.

Cheesecake Batter

Beat the cream cheese then add the sugar. Add the vanilla, salt, and eggs, one at a time. Then stir in the melted white chocolate.

Make a man of tin

Cover the pan with foil and bake the cheesecake  in a water bath for 60 - 70 minutes. Swipe up for more detailed instructions.

Cool the Cheesecake

Turn off the oven and prop open the door for one hour. Then remove and cool until room temperature. Refrigerate for 8 hours.

Raspberry Topping

If desired, cook raspberries, sugar, and lemon juice over medium heat for 15-20 minutes, until a sauce forms.
