The Best Gingerbread Cookies!

Learn how to make soft gingerbread cut out cookies that are perfect for decorating and even better for eating. These classic Christmas cookies are a must-bake!

Cookie Ingredients

To make soft gingerbread cookies you will need butter, brown sugar, molasses, vanilla, flour, baking soda, cinnamon, nutmeg, ginger, and salt.

Step One:

Beat the butter with the brown sugar until light and fluffy. Add the molasses and vanilla extract, then beat the mixture again.

Step two:

In a mixing bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking soda, and salt. Set the bowl aside for later.

Step Three:

Add the flour mixture to the butter mixture and stir until combined. Be careful not to over mix the dough. If the dough is dry, add a little milk.

Step Four:

Place half of the dough on a sheet of parchment paper, then lay another sheet on top. Use a rolling pin to roll the dough to 1/4 inch thickness. Refrigerate for 2 hours.

Step five:

Remove from the fridge and use your favorite cookie cutter to cut the dough into shapes. I used these Mickey Mouse Gingerbread Man cookie cutters.

Step six:

Place the cookies on a parchment paper lined baking sheet about two inches apart and bake at 350 degrees for 9-10 minutes.

Step Seven:

Remove from the oven and allow the cookies to rest on the baking sheet 10 minutes before transferring them to a wire cooling rack to cool completely.

Step Eight:

Decorate your gingerbread cookies with royal icing or use colored candy melts like I did for these adorable Mickey Gingerbread Men. Tap below to get the full delicious recipe!
