Gather the Ingredients

You will need flour, buttermilk, ricotta, baking powder, vanilla, eggs, oil, salt, sugar, lemon juice, and lemon zest.

Dry Ingredients

In a large mixing bowl, whisk together the flour, baking powder, and salt. Set aside.

Wet Ingredients

Whisk together the Buttermilk, eggs, and vanilla extract in a separate medium bowl.

Add Ricotta

Add the ricotta cheese, sugar, and lemon zest and mix to combine.

Combine Ingredients

Add the wet ingredients to the dry ingredients and mix together.

Add Batter to Griddle

Scoop approximately 1/4 cup of batter for each pancake onto the hot, greased griddle.

Watch for Bubbles

When bubbles begin to appear on the pancakes, flip them over.

Cook Until Golden

Cook on the other side for 3-4 minutes until they are golden brown.
