Gather the Ingredients

You will need all-purpose flour, mashed bananas, sugar, melted butter, vanilla, egg, baking powder, cinnamon, salt, and baking soda.


Dry Ingredients

In a medium bowl, stir together the all-purpose flour, baking powder, baking soda, salt and cinnamon.


Wet Ingredients

Mix the bananas, sugar, egg, vanilla and butter. Then combine the wet and dry ingredients being careful not to over mix.


Prepare the Pan

Prepare to bake by spraying a muffin pan with cooking spray or line with paper baking cups.


Measure Muffin Batter

Use a cookie scoop to measure a 1/4 cup of  batter in each cup. Combine the remaining cinnamon and sugar and sprinkle over the batter.


Bake the Muffins

Bake the muffins for 15-20 minutes at 350 degrees until a toothpick inserted in the center of the muffin comes out clean.


Cool the Muffins

Remove the muffins from the oven and transfer them to a wire cooling rack.
