For the homemade enchilada sauce, you will need butter, water, tomato sauce, salt,  chili powder, paprika, beef bullion, and flour.

Enchilada Ingredients

For the enchiladas, you will need corn tortillas, shredded cheese, chopped green onions, and vegetable oil for frying.

Enchilada Sauce

Melt the butter and add 4 cups of water, tomato sauce, salt, chili powder, paprika, and beef bullion. Boil, then simmer for 30 minutes.

Thicken Sauce

Mix the flour and water. Whisk the mixture into the sauce until it reaches desired thickness. Keep warm.

Prepare Tortillas

Heat the oil over medium heat in a small pan. Place tortillas in the hot oil, one at a time, for 10 seconds on each side. Transfer to a paper towel to drain.

Enchilada Filling

Mix 2 cups of shredded cheese with the chopped onions, reserving some onions for garnish.

Enchilada Casserole

Add sauce to the the bottom of a baking dish. Place 3-4 tablespoons of cheese to each tortilla, roll up and place in the dish or add a layer tortillas, topped with a layer of cheese, then more tortillas.

Bake the Casserole

Cover the enchiladas with sauce and top with the remaining shredded cheese. Bake at 350 degrees for 20-25 minutes. Serve with your favorite toppings!
