Caramel Pecan Turtle Cheesecake
Chocolate Cookie Crust
Use a food processor to crush chocolate sandwich cookies and mix with melted butter and a pinch of salt.
Bake the Crust
Press the mixture onto the bottom of a springform pan. Bake for 10 minutes.
Combine all cheesecake ingredients and whip until smooth and creamy.
Pour 2/3 of the batter over the cookie crust in the springform pan.
Divide Batter Again
Divide the remaining 1/3 of the batter into two bowl.
Mix one of the bowls of cheesecake batter with melted chocolate chips.
Add caramel syrup to the second bowl of cheesecake batter and stir to mix.
Swirl Cheesecake Batter
Add the chocolate and caramel batter to the springform pan and use a knife to swirl the cheesecake batter together.
Bake the Cheesecake
Bake the cheesecake in a water bath then allow to cool. Refrigerate for 4 hours to overnight.
Drizzle the cheesecake with caramel syrup and top with chopped pecans and whipped cream.
