Thin Mint Truffle Brownies with Whipped Ganache Frosting

Instructions
Brownie Layer
  1. Melt the butter and stir in the cocoa powder. Set aside to cool. Beat the eggs and slowly add the sugar and vanilla. Add the cooled chocolate mixture and stir to combine.
  2. In separate bowl, mix the flour, salt and baking soda. Add to the wet ingredients and stir until moistened. Batter will be thick.
  3. Prepare a 9×13 pan by spraying with cooking spray or lining with parchment paper. Pour the batter into the pan and bake at 350 degrees for about 30 minutes until a toothpick inserted in the middle comes out clean. Remove from the oven and allow to cool completely.
Thin Mint Truffle Layer
  1. Using a food processor, blender or rolling pin, crush the Thin Mint cookies until you have fine crumbs.
  2. Pour into a bowl and stir with the softened cream cheese until totally incorporated and moist. Spread over the cooled brownies.
Whipped Chocolate Ganache Frosting
  1. Place the chocolate chips in a microwave-safe bowl and pour the cream over the top. Microwave at 50% power for 30 seconds. Remove and stir. Continue to microwave in 30 second increments until the chocolate chips are melted and are incorporated with the cream.
  2. Refrigerate the ganache until it is thick enough that it doesn’t fall off the spoon.
  3. Place the ganache in the bowl of a stand mixer and whip until light and fluffy, about 4-5 minutes. Spread over the top of the Thin Mint Truffle layer. Sprinkle the cookie crumbs over the ganache and gently press them down.
  4. Refrigerate 15-20 minutes before cutting. Store them in the refrigerator until ready to serve.
How to cut the Brownies
  1. If you used parchment paper to line your pan, remove the brownies by lifting on the parchment with a hand on each side. Slice off the edges of the brownies and then cut them to the desired size.
