Pumpkin Chocolate Chip Cookies

  1. Preheat oven to 350 degrees. Mix together all of the dry ingredients: flour, baking soda, baking powder, pumpkin seasoning, and salt.
  2. Add softened butter and sugar to the bowl of a stand mixer. Beat it until it is light and fluffy. Add the pumpkin puree, egg and vanilla.
  3. Slowly add the flour mixture to the pumpkin mixture and mix until everything is incorporated. The dough will be the consistency of muffin batter.
  4. Stir in 1 cup chocolate chips and 3/4 cup white chocolate chips.
  5. Place parchment paper or a silicone liner on a baking sheet. Using a two tablespoon cookie scoop, drop batter onto the baking sheet about two inches apart.
  6. Bake at 350 degrees for 14-16 minutes until the edges of the cookies are firm.
  7. Remove them from the oven and allow them to rest for two minutes, then transfer them to cooling rack.
  8. Heat the remaining white chocolate chips in the microwave on 50% power at 30 second intervals stirring in between until melted.
  9. Add the melted chocolate to a ziplock bag and snip off a tiny piece of the corner. Drizzle the white chocolate over the top of the cookies.
