Instructions
  1. Cream the butter and sugar until light and fluffy.
  2. Mix in the vanilla and eggs until incorporated.
  3. Add flour, baking powder, and salt. Mix well.
  4. Spray a mini muffin tin with non-stick spray.
  5. Using a cookie scoop, add one tablespoon of cookie dough to each muffin cup.
  6. Bake at 350 degrees for 11-13 minutes.
  7. Press the back of a 1 teaspoon measuring spoon into each cookie to create a cookie cup.
  8. Allow to cool for 2-3 minutes, then transfer to a cooling rack.
Green Vanilla Frosting
  1. Whip the softened butter.
  2. Mix in the vanilla.
  3. Add the powdered sugar a little at a time, mixing between each addition.
  4. Add milk, one tablespoon at a time until the desired consistency is reached.
  5. Add enough green food coloring to make light green.
