Disneyland’s Cheesy Enchilada Soup
Disneyland’s Cheesy Enchilada Soup is a creamy, cheesy, hearty soup that is loaded with veggies and flavor. Super delicious and super easy to make! You can find it seasonally at the Jolly Holiday Cafe.

Instructions
  1. Heat oil in a large saucepan over medium heat. Add the diced chicken and chopped onion. Cook until chicken is no longer pink and the onions are translucent.
  2. Add the garlic, bell pepper and corn. Cook for about 2 minutes, then sprinkle with flour and stir until incorporated.
  3. Stir in chicken broth, enchilada sauce, chili powder, pepper, sugar, hot sauce and Worcestershire sauce. Bring to a boil. Lower the heat and simmer for 15 minutes.
  4. Stir in sour cream, cheddar cheese and black beans.
  5. Garnish with tortilla strips, cheese, sour cream, chopped cilantro and green onions.
Recipe Notes

*If the soup does not thicken to your liking, prepare a roux. In a separate pan, melt 1/4 cup of butter and whisk in 1/4 cup of flour.  Add 1 cup of soup.  Then 3 more cups.  Stir until thickened.  Add the mixture back into the pot of soup and incorporate. *You can transfer the soup to a slow cooker to keep warm if you will be serving the soup later.
