Chicken
  1. Cut chicken into bite-size pieces and place in a gallon sized bag. Mix the buttermilk and egg together and pour over chicken. Marinate in the refrigerator for 1 hour to overnight.
  2. Preheat oven to 425 degrees. Cut the butter and place on baking sheet. Put the baking sheet in the oven to melt the butter while you are preparing the chicken. Combine flour, breadcrumbs, cornmeal, salt, seasoned salt, pepper and paprika in a separate ziploc bag.
  3. Remove chicken from marinade with a slotted spoon and place in the seasonings bag. Shake the bag until all chicken pieces are covered. Remove pan from oven and spread butter around. Place popcorn chicken on the pan and bake in the oven for 10 minutes. Flip chicken over with tongs and cook on the other side for 10 more minutes. Remove from oven and place on a paper towel.
Louisiana Pasta & Sauce
  1. While the chicken is baking/heating, melt the butter in a large skillet or pot over medium-high heat.
  2. Add the peppers and onion and cook until tender. Add the garlic and red pepper flakes and cook 1 more minute.
  3. Add the chicken broth, heavy cream, cajun seasoning and box of pasta. Bring to a boil. Turn the heat down to low-medium and cover. Let the pasta simmer for 15 minutes, stirring often.
  4. When pasta is tender and sauce is the desired consistency, serve in a bowl topped with chicken.
