I love to eat salad but I get tired of the same ingredients each and every time. That’s why this Fiesta BBQ Ranch Chicken Salad has quickly become a favorite at my house. The creaminess of the ranch dressing goes perfectly with the tanginess of the BBQ Vinaigrette.  All of these ingredients come together to make the perfect salad when you are craving the tastes of summer!

You’ll start by placing the chicken in a zip top bag.  Whisk together the ranch dressing, canola oil and steak seasoning. Pour that mixture over the chicken and refrigerate while you prepare the rest of the salad.

Place the corn, black beans and chopped red pepper in a mixing bowl. Whisk together the ranch, lime juice and taco seasoning. Pour it over the corn and black bean mixture and stir to combine.  Set aside.

Now its time to make the BBQ Vinaigrette.  Whisk the canola oil, BBQ sauce, balsamic vinegar and garlic together. Prepare the rest of salad ingredients by chopping the lettuce, cutting the pepper jack cheese into cubes and cubing the avocado.

Remove the chicken from the marinade and cook it in a skillet over medium-high heat for about 5 minutes. Flip the chicken over and cook on the other side for 5 minutes or until it is cooked through and the juices run clear. Place it on a plate and tent with foil for about 10-15 minutes. before cutting into bite-size pieces.

Place your chopped lettuce in a bowl with the vinaigrette and toss it to coat. Divide the lettuce among four bowls or plates for serving.  Top the lettuce with the Corn & Black Bean Salad, pepper jack cheese, avocado and chicken. Instructions
Ranch Chicken
  1. Place the chicken in a zip top bag. Mix together the ranch, oil and steak seasoning. Pour it over the chicken and refrigerate for at least 30 minutes.
  2. Cook the chicken in a skillet over medium heat until fully cooked through. Remove the chicken from the skillet, transfer to a plate and tent it with foil.
Corn & Black Bean Salad
  1. Place the corn, black beans and chopped red pepper in a mixing bowl.
  2. Whisk together the ranch, lime juice and taco seasoning.
  3. Pour it over the corn and black bean mixture and stir to combine. Set aside.
Salad
  1. Chop the lettuce.
  2. Cube the Pepper Jack cheese.
  3. Cube or slice the avocado.
BBQ Vinaigrette
  1. Whisk or blend all of the ingredients in a blender to combine.
Salad Assembly
  1. Place the lettuce in a large bowl with a lid. Pour in the BBQ Vinaigrette and toss with the lettuce. Divide the lettuce among 4 bowls or plates.
  2. Top the lettuce with the chicken, Corn & Black Bean Salad, cheese, avocado and tortilla strips.
  3. Drizzle with a little ranch and BBQ sauce, if desired.
