Instructions
  1. Prepare the Herb Vinaigrette by placing all of the ingredients in a blender and blend.
  2. Place the chicken in a zip top bag and pour half of the vinaigrette on top. Refrigerate for 30 minutes.
  3. Chop the lettuce, peel and slice the hard boiled eggs, slice the grape tomatoes in half and slice the black olives.
  4. Slice open the avocado and remove the pit. Smash the avocado to guacamole consistency.
  5. Remove the chicken from the plastic bag and discard the marinade. Cook on a griddle, frying pan or grill over medium-high heat for 4-5 minutes on each side until the juices run clear. Remove the chicken from the grill and tent with foil. Let it rest for 10 minutes then slice.
  6. Assemble the salad by placing the lettuce and dressing in a large bowl and cover. Shake to toss.
  7. Top the salad with eggs, bacon, edamame, grape tomatoes, black olives, feta and avocado. Enjoy!
Recipe Notes

This salad can be made quickly by using pre-sliced olives, frozen edamame, pre-crumbled feta cheese and packaged bacon pieces.
